Kidney Beans are Highly Toxic
Phytohaemagglutin, which the U.S. Department of Agriculture, or USDA, refers to as kidney bean lectin, occurs naturally in many other types of beans. However, the red kidney bean has the most dangerous levels of toxins for beans. The toxin, measured in hemagglutinating units, or hau — a measure of toxicity — falls from a high of 70,000 hau in raw beans to under 400 hau when you thoroughly cook the red kidney beans. Sadly, if a person was to eat four or five raw or undercooked kidney beans they can begin to get symptoms of being sick.
